Me llamo Virginia Hernández. Soy cocinera tradicional Tengo 18 años de experiencia en diferentes lugares. Actualmente me encuentro muy cerca de la zona arqueológica de Monte Albán. La cocina es un lugar totalmente auténtico donde estarás en contacto con la naturaleza pues es un lugar abierto. Aprendí de mi abuela, mi madre y de personas cercanas a la familia. Las clases de cocina son una experiencia única.
Clase de cocina Maíz & Nixtamal
La clase comienza con un recorrido al mercado de abastos para comprar los ingredientes, siempre frescos y orgánicos.
Después nos vamos muy cerca de la zona arqueológica de Monte Albán. Ahí nos esperan con un rico café o un té. Después de una merienda continuamos con la clase, empezando a poner nixtamal desde cero. Se prepara una bebida caliente de maíz, salsa, sopa se hierbas silvestres. Y para finalizar una pasta de mole.
Cocina Prehispánica al Fogón
Cocina prehispánica en fogón. Es una clase auténtica donde conocerás los procesos más antiguos de la comida tradicional oaxaqueña.
En un espacio abierto, dónde te espera un delicioso café de olla (y algunos snacks si así lo deseas). Podrás escoger el color de tu maíz para preparar nixtamal desde cero para poder obtener la masa para hacer. tortillas y quesadillas.
Clase de cocina humanitaria
Hago esta clase para apoyar a personas de la tercera edad y personas con discapacidad. El apoyo es de $350 Pesos Mexicanos. Si es posible cada dos semanas, dependiendo de cuantas personas asistan. Hacemos tlayudas, pasta de mole para hacer tamales. También hacemos salsas y una bebida a base de maíz. Before the cooking class you get to explore this huuuge food market which was amazing, then we got driven to Vicky’s place up in the mountains where you get to make all the food you just bought, from scratch. It’s a really amazing to do this traditionally, and slower, and rather than have everything at hand as we’re so used to in the modern day.
The food was incredible too, which was a bonus – would really recommend this!”

We took the day-long class with Virginia and learned to make mole pasta from scratch using the metate. It was a lot of work but well worth it. We are Mexican and did not grown up learning to use the metate and are now in the process of reclaiming this wonderful tradition. The mole came out so delicious you guys, one of the best I have had, ever. The best part is we can now go on to practice at home with or without the metate and the mole stores well for 6+ months. Talk about healthy food preservation that is culturally relevant and a nutritious emergency preparedness food!

“It’s absolutely worth taking a cooking class with Vicky. It was truly a highlight of our time in Oaxaca and the best food we’ve eaten in Mexico.
We met Vicky in town and she took us to the biggest market in Oaxaca, where we shopped for all the ingredients we’d later need for cooking. It was an experience going there in itself and we managed to buy some pottery (at a 10th of the price you’d find it in town).
After we’d finished in the market, she drove us back to her house in the mountains, close to Monte Alban. The drive up was fab, with amazing views over Oaxaca.
At her house, we learnt to cook in a traditional kitchen that her father built into the side of a mountain. We made 5 dishes, all from corn and Vicky answered any questions we had about the method of cooking and history of Oaxaca.
It was honestly an exceptional experience and if you have the time, you should definitely take it!
