Meet Your Teacher

My name is Virginia Hernández. I’m a traditional cook. I have 18 years of experience in different places. Currently I’m located close to the Monte Albán archeological site. The kitchen is an authentic place where you’ll be in contact with nature because of its open setup. I learned from my grandmother, my mother, and from family friends. The cooking classes are quite and unique experience.

Corn & Nixtamal Cooking Class

The class begins with a walk through the Abastos Market to buy the ingredients, always fresh and organic.

Then, we go to the area of the Monte Alban archeological site, where a delicious coffee or tea await for us. After a small meal, we continue with the class, we cook Nixtamal from scratch, we make a corn-based hot drink, salsa, wild greens soup and to finish mole from paste.

Prehispanic Cooking Class

Cocina prehispánica en fogón is an authentic class where you’ll get to know the oldest techniques of traditional Oaxaca food and cooking.

In an open space, where a delicious Café de Olla awaits for you (and some snacks if you wish). You’ll be able to choose your corn color to make nixtamal from scratch so we can obtain the masa to make Tortillas and Quesadillas.

Cooking Class with Cause

I do this class to support elders and people with disabilities. The support cut is $350 Mexican Pesos. If possible every other week, depending on how many people attend. We make Tlayudas, Mole paste to make Tamales. We also make salsas and a corn-based drink. With your booking you will learn, have fun, eat and more importantly; you’ll help to but the food and to support our community. Join us!

Before the cooking class you get to explore this huuuge food market which was amazing, then we got driven to Vicky’s place up in the mountains where you get to make all the food you just bought, from scratch. It’s a really amazing to do this traditionally, and slower, and rather than have everything at hand as we’re so used to in the modern day.

The food was incredible too, which was a bonus – would really recommend this!”

We took the day-long class with Virginia and learned to make mole pasta from scratch using the metate. It was a lot of work but well worth it. We are Mexican and did not grown up learning to use the metate and are now in the process of reclaiming this wonderful tradition. The mole came out so delicious you guys, one of the best I have had, ever. The best part is we can now go on to practice at home with or without the metate and the mole stores well for 6+ months. Talk about healthy food preservation that is culturally relevant and a nutritious emergency preparedness food!

“It’s absolutely worth taking a cooking class with Vicky. It was truly a highlight of our time in Oaxaca and the best food we’ve eaten in Mexico.

We met Vicky in town and she took us to the biggest market in Oaxaca, where we shopped for all the ingredients we’d later need for cooking. It was an experience going there in itself and we managed to buy some pottery (at a 10th of the price you’d find it in town).

After we’d finished in the market, she drove us back to her house in the mountains, close to Monte Alban. The drive up was fab, with amazing views over Oaxaca.

At her house, we learnt to cook in a traditional kitchen that her father built into the side of a mountain. We made 5 dishes, all from corn and Vicky answered any questions we had about the method of cooking and history of Oaxaca.

It was honestly an exceptional experience and if you have the time, you should definitely take it!
